有「冰皮月饼之父」称号的郭鸿钧先後在香港酒店、嘉顿集团及不同的餐厅工作，从事面包西饼工作。後来加入超群饼店，得到老板李曾超群的赏识，转做管理工作，先後引入自助式售卖面包及预售西饼卡。郭鸿钧与其他友人在1984年合资在淘大开设大班饼店，初期只是一间普通饼店，主要售卖面包西饼。1989年大班首创冰皮月饼，使传统月饼市场出现变化，其他饼店争相仿效。1991年大班面包西饼引入特许经营计划，希望能加速分店的扩张。

大班面包西饼售卖多种面包，也售卖蛋挞、蛋糕和西饼。除此之外，大班面包西饼也推出各种节日产品，如中式饼食、粽及月饼等。在葵芳地铁站大堂开设大班Express分店，售卖快餐食品如早上的传统鸡球大包、西式焗饭至各款下午茶套餐。
