赖汤圆迄今已有百年历史。老板赖源鑫从1894年起就在成都沿街煮卖汤圆,他制作的汤圆煮时不烂皮、不露馅、不浑汤,吃时不粘筷、不粘牙、不腻口,滋润香甜,爽滑软糯,成为成都最负盛名的小吃。现在的赖汤圆,保持了老字号名优小吃的质量,其色滑洁白,皮粑绵糯,甜香油重,营养丰富。

赖汤圆创始于1894年,创制人原是四川资阳东峰镇人,名叫赖元鑫。由于父病母亡,赖元鑫跟着堂兄来到成都一家饮食店当学徒,后来得罪了老板,被辞退。由于生活无着,赖元鑫才找堂兄借了几块大洋,担起担子卖起汤圆来。偌大个成都,卖汤圆的如此众多,要想站住脚根,非有过人之处不行。因此,他暗订了三条规矩:一是利看薄点;二是服务好点;三是质量高点。他起早贪黑,粉子麻得细,心子糖油重,卖完早堂,赶夜宵,苦心经营。直至30年代才在总府街口买了间铺面,坐店经营,取名赖汤圆。他的汤圆选料精、做工细、质优价廉、细腻柔和、皮薄馅丰、软糯香甜。有煮时不浑汤,吃时三不粘(不粘筷、不粘碗、不粘牙)的特点。而且通过一段时间,品种不断扩大。从开始的黑芝麻、洗沙心,逐渐增加了玫瑰、冰桔、枣泥、桂花、樱桃等十多个品种。各种馅心的汤圆又形状不同,有圆的、椭圆的、锥形的、枕头形的。上桌时,一碗四个,四种馅心,四种形状,小巧玲珑,称为鸡油四味汤圆。吃时配以白糖、芝麻酱蘸食,更是风味别具。一时顾客都慕名而来,于是赖汤圆集腋成裘,赚了一大笔钱。钱多了,名气也大了起来。特别是在成都的资阳同乡会里,这个一字不识的文盲,却成了举足轻重的人物。1939年,家乡要筹建一所中学,邀请赖元鑫回乡观光,赖深知不识字的苦处,为了报效桑梓,捐赠了150担(约合2.5万多公斤)谷子,作储彦中学的办学经费。直到1950年,赖元鑫对这所时有捐助。现今的三元寺中学,前身即是储彦中学。赖汤圆捐资办学一事,在四川资阳曾传为佳话。
