祁红是祁门红茶的简称。产于安徽省祁门、东至、贵池、石台、黟县，以及江西的浮梁一带。茶叶的自然品质以祁门的历口、闪里、平里一带最优。

“祁门香”所用的茶树是全国茶叶品种审定委员会议定的国家良种“祁门种”，灌木型，中叶类，树姿半开展，分枝密度中等叶片略向上斜生，叶形长椭圆，叶面微隆起，叶色绿，富光泽，叶质柔软。

祁红现采现制，以保持鲜叶的有效成分，特级祁红以一芽一叶及一芽二叶为主，制作工艺精湛。分初制和精制两大过程，初制包括萎凋、揉捻、发酵、烘干等工序。精制则将长短粗细、轻重曲直不一的毛茶，经筛分、整形、审评提选、分级归堆，同时为提高干度，保持品质，便于贮藏和进一步发挥茶香，再行复火，拼配，成为形质兼优的成品茶。

“祁门香”香飘五洲，主要出口英国、荷兰、德国、日本、俄罗斯等几十个国家和地区，多年来一直是我国的国事礼茶。刘少奇主席、江泽民总书记出国访问时都曾带过“祁门香”馈赠外国元首。

It is divided into two major processes of primary preparation and refining, including withering, rolling, fermentation, drying and other processes. In order to improve the dryness, maintain the quality, facilitate the storage and further develop the flavor of tea, then re fire and mix to become the finished tea with excellent shape and quality. Qimenxiang is a kind of national tea in China for many years. When President Liu Shaoqi and General Secretary Jiang Zemin visited abroad, they all brought "qimenxiang" as gifts to foreign heads of state.
