山东青州云门酒业(集团)有限公司座落于古九州之一的青州。
从青州苏埠屯出土的酒器看,青州酒的诞生至少已有3600年的历史。“青州从事”作为美酒的雅号 ,已有1500年,南朝人刘义庆《世说新语》记载:“恒公主簿善别酒,有酒辄令先尝,好者谓‘青州从事’,恶者谓‘平原督邮’。”唐代诗 人皮日休有诗云:“醉中不得亲相倚,故遗青州从事来。”苏东坡《真一酒》有句:“人间真一东坡老,与作青州从事名。”唐宋八大家之一 的欧阳修,自取雅号“醉翁”,北宋熙宁年间,在青州做太守时写下了:“醉翁到处不曾醒,问向青州作么生,公退留宾夸酒美,睡余倚枕看 山横”的佳句。公元1107年(北宋大观元年)秋天,李清照来到青州,她为新家取名“归来堂”。她在青州期间,天天饮酒,所写的词作,几乎篇篇浸润了酒香醇风:“未成沉醉意先融”——或许是青州酒太好了,酒还未醉人,人心已经醉了。
为了使青州酒能继续酿造出文化的神韵 ,人民政府接管了东关“裕丰”酒坊,并在日本凌木丝厂的废墟上成立了“胶济专酿公司青州实验酒厂”。1951年更名为山东省专卖事业公司青州酒厂;1953年更名为青州酒厂;1958年更名为山东青州酒厂;1966年更名为山东益都酒厂;1986年更名为山东青州酒厂;1998年企业进行改制,更名为山东青州云门酒业有限公司。2001年企业二次改制为民营企业,更名为山东青州云门酒业(集团)有限公司至今。
八十年代初期,通过学习茅台工艺,研发生产出了酱香型云门陈酿酒,打造出了具云门酒业特色的北派酱香品牌。2009年3月,云门酒业集团与茅台集团、郎酒集团一起参与了全国酱香型白酒标准的制定,并成为山东省酱香白酒技术规范的制定者。
1996年云门酒业与川鲁酒业技术合作,与四川宜宾五粮液酒厂科研所将五粮浓香工艺与鲁酒的老 五甑工艺有机结合起来,创造了优质低度浓香型云门春王酒。
2003年公司凭借青州的地理环境优势,启动了云门洞藏系统工程,于2003年和2005年 在仰天山脉狮子峪启用了“天人洞”和“天合洞”,经多年检测,洞中常年恒温保持在16-23℃之间,湿度75%以上,酿酒微生 物含量丰富,负氧离子多,为酒的老熟提供了优良的自然条件。2010年12月,中国白酒洞藏研究基地落户公司。
云门酒业新厂区的一期工程已投入生产使用,总投资近7亿元的酱香酒城(二期工程)正在建设当中,该酒城年产酱香酒5000吨,集原料粉碎、制曲、酿造、贮存、包装、酒文化展示、工业旅游于一体,将为真正成为北派酱香品牌打下坚实的基础。
