杏花楼创建于清朝咸丰元年(1851年),是国内著名的中华老字号名店,其品牌声誉蜚声海内外。

1913年民国初期,最初的杏花楼小店扩建成一座老式两层楼房,取名“探花楼”。1927年,探花楼为了适应日益发展的商业交易往来的需要,决定扩大业务,成立了“探花楼昇升记股份有限公司”,又在原址翻建成七开间门面,钢骨水泥结构的四层楼大饭店,后经建议将“探花楼”更名为“杏花楼”,全称是“杏花酒楼昇记股份有限公司”。1930年清朝末科榜眼朱汝珍特地为杏花楼书写招牌,挂在店堂正中。杏花楼于1998年改制成立股份公司,2002年更名为杏花楼食品餐饮股份有限公司。

杏花楼素以地道粤菜,精制月饼著称,又以经营中西糕点、粽子腊味享誉申城。九十年代以来,杏花楼得以快速发展,如今已形成了能适应市场快速变化的创新发展机制,奠定了现代企业的发展治理基础和经营模式,

企业规模不断壮大,企业资产保值增值。

1995年,杏花楼建成了地处浦东金桥占地7000平方米的食品厂,进一步做强做大了月饼品牌,月饼生产突飞猛进,当年获得市技监局颁发的第一面食品质量奖奖旗,连续评为上海名牌产品100强,品牌拓展全国,进军海外。

1998年,企业通过改革,促进机制的创新和完善,实施了以餐饮食品并举发展向以食品为支柱产业的发展转型,当年月饼创下1.5亿元的商业奇迹,网络拓展加快食品发展,以月饼为核心的品牌延伸形成系列,创出“春季糕团,夏季粽,秋季月饼,冬腊味”的四季品牌,形成长线产品与短线产品的品牌联动效应,开创了传统食品新潮,2003年杏花楼月饼、糕点、腊味评为上海商业领头羊品牌,品牌战略卓有成效,被解放报头版报道“传统品牌赢了现代商机”。

如今,杏花楼又以现代商企的运作经营品牌,实施了经销扩张与增强内涵的转化,实施有效的创新机制和结构调整,形成科学的产业链,使单一的实业运作走向同资本经营相结合的道路,实施股份制向国际运作标准靠拢,加快发展提升食品连锁经营,打造国内一流的民族品牌,已成为杏花楼品牌“传承百年、再续百年”的努力方向。

2005年,公司新建了地处浦江镇,占地3万平方米的国内规模超大、设备先进、自动化程度高、以“FDA+DIY”理念设计建立的现代化食品厂,被专家称赞为是以食品安全为第一考量的花园式工厂。

新建成的产品研发大楼已投入运转,成立以总经理挂帅、厂长负责、高技和专业人才组成的新品研发小组,以安全、卫生、提升、创新的工作方针,以引进、创新与自我研发结合,发扬传统经典,开创食品现代品质,打造“大众精品”的食品发展方向。

公司已形成食品系列化,现有中点50余只,西点100余只,肉制品40只,另外正在研发的休闲食品、及引进产品15只。

新建食品厂具有年产2万吨食品的能力,形成月饼、中西糕点、蓉沙、肉制品、面包、饼干、速冻、休闲食品七大类食品的研发功能,预计投产后,一期产值可达3.5亿元,至2008年争取食品产值5亿元。

杏花楼将在新一轮的食品大发展中,进行资源整合,放大优势,到2006年要形成80家门店的连锁规模,建立配货中心,实现电脑联网终端管理,提升企业管理能级,要在今后三年内成为国内最具竞争力的食品制造企业之一。
