郫县豆瓣鼻祖陈氏祖辈唯一首创发明三百年历史。

蜀人好食天下闻明,川人之菜独具风味,川菜百菜百味,声色香形惊艳出俗而余味无穷,何故?皆因川菜之求实而择料无论,重味而佐料考究,故川菜海纳百川,兼容天下之食而独具麻辣之味,川味源渚于佐,佐则其惟一物,是惟川菜之灵魂——“绍丰和”郫县豆瓣也。

相传明末清初,陈氏祖辈陈益兼在入蜀途中。其赖以充饥之蚕豆遇连日阴雨而生霉。祖辈不忍弃,遂置于田埂晾晒就以鲜辣椒拌和而食,竟鲜美无比,余味悠长,其后竟以此为生。此概为郫县豆瓣之最初起源。
清嘉庆八年,福建汀州祖辈陈逸先来到郫县,于郫县南街开设作坊取本地原料与清水,以此法大量生产豆瓣dong兼而经营酱醋,渐成气候,郫县豆瓣亦始得名。清咸丰三年,六公公陈守信于郫县城南街开设酱园,以酿造酱醋和祖传之郫县豆瓣为业。其店号曰“绍丰和”酱园。

民国初年,郫县豆瓣的生产已成相当规模,并籍以郫县所产之大烟远销各地,东经成渝沿江而下至湘鄂,南转宜宾行销云贵,西由雅安销至康藏,北取道广元销往陕甘。外地来的郫县烟贩均征购豆瓣以返乡馈赠友邻亲朋,从此,郫县豆瓣名声远洋。民国四年,四川军政府犒赏西藏。于郫县“绍丰和”酱园订购郫县豆瓣三、四万斤。货至驻军,军士去荷叶、油纸,视之鲜亮如昨,尝之味美无比,深得官兵赞誉。军政府特此传令嘉奖冰赠奖牌以兹鼓励,郫县豆瓣由此名声大噪。通过几代人的努力,积累了一定财富。

一九五八年,绍丰和响应政府号召,实行公私合营组建成为国营郫县豆瓣厂,革新定名地方国营,产量扶摇直上。从此随川菜的流传,郫县豆瓣也远销至世界各地,深得各国人民的喜爱。

时到今日,“绍丰和”郫县豆瓣已愈三百年的历史,世事沧桑,时移俗易。多少传统之文化风俗和土特名产已随风而逝,而唯郫县“绍丰和”豆瓣延续至今,此乃川人之大幸也!

现由陈氏后裔——传人陈述承继祖业发扬光大。本厂下设作坊两处,主产红豆瓣、盐渍菜、调味品等系列产品。所生产的豆瓣按祖传秘方工艺生产、配料考究、工艺独特、质量过硬,通过360多天人工翻晒酿造而成,豆酥瓣脆,粘稠绒实,其色红褐明润、油亮、鲜实为川菜烹饪必备之调料,亦可直接佐餐分为提味增色,故深得川人亲睐。

In the fourth year of the Republic of China, the Sichuan military government rewarded Tibet. Order 30000 or 40000 Jin of Pixian Douban in "shaofenghe" soy sauce garden of Pixian County. To this day, "Shaofeng" and "Pixian Douban" have a history of more than 300 years, and the world has changed.
