故事始于Scott Minoie，一个终生美食家和厨师以及他涉足餐饮业，在上海开了个果汁吧的朋友Sheldon Habiger。 

激动人心的时刻发生在2002年： 一个在上海零售租赁部工作的老顾客提出愿意在上海商城为这个年轻餐厅提供一席之地。消息一出，其他客人也纷纷表示力挺，给予创始人经济支持。Sheldon的妻子邬亮也加入进来，贡献了专业的零售管理能力及政府合作经验。 

就这样，在2002年7月12日，新元素在上海商城开启它的美食之旅。
