起源:富乐烧坊
中国白酒,历来要求历史深远,文化厚重,口感自然。溯源丰谷酒的前身,有史记载,有物为证的历史可追溯到公元212年的富乐烧坊。据《三国志》和《方舆胜览》记载:东汉建安十六年(公元212年),刘备入蜀,益州牧刘璋迎至绵州,二人煮酒百日论天下。刘备畅饮富乐烧坊美酒后称赞“富哉,今日之乐乎!”常饮北方烈酒的刘备,入川偶饮味醇香、清冽、回甘的烧坊酒,如获至宝,固常以此酒嘉奖获胜将士。将士因此斗志昂扬,战无不胜,很快攻下成都,建立蜀国。无战时,有将士因好此酒,而偷购偷饮过量,刘备曾军令禁酒。但在蜀王筵宴群臣时,总也少不了富乐烧坊美酒,因备甚爱此酒,将士亦酷爱,少之胜似不尽意。而在随后的千多年中,富乐烧坊美酒因蜀王至爱,而在唐宋元明时期得以兴盛,酿酒秘技得以传承。
延续:传世秘籍
在丰谷酒史馆中,一件经过还原的竹简酿酒秘籍详细记载了富乐烧坊酿酒的秘技。“主料:南麦、小麦、大麦、稻谷、玉米、高梁”。过程:“窖藏发酵,择时精酿,瓮盛应市,以质论价”。据东汉富乐坊王氏世谱记载。从东汉富乐烧坊到天佑烧坊,直至今天的丰谷酒业。在绵延千年的历史演变中,丰谷人一直严格遵循着“古法酿造,始终如一”的古训,延用老窖泥接种繁衍,老窖发酵,陶瓮储藏的方法,专注于生态白酒的销售酿造。2010年4月26日,丰谷酒业对外宣言,历时3年科研探索,经低醉酒度动物评价模型“DNA”检测,在丰谷优质浓香型白酒上千种微量元素中,找到延续1800年的健康低醉因子,发现丰谷白酒上千年来一直保持“醉得舒适,醒得快”的基因密码。
兴盛:天佑烧坊
康熙十七年(公元1678年),深得杜绍康酿酒之秘的王秉政,耳顺之年移置绵州铜牟镇兴隆沟(今绵阳丰谷镇),在传承千年的“富乐烧坊”酿酒秘籍的基础上,结合所携“汾、凤”二酒秘技,潜心数年,遂创建了“天佑烧坊”。并将掘窖之技,制曲之术,酿酒之法,配料之方,品调之艺,逐一传授其子王法天,并扶杖亲临现场指导,出酒后又亲口品尝,评定优劣。训之:“酒之优劣,入口可判,经营者应严把品评优劣之关,优者价优,劣者价廉,不可混同。此为立信之本,亦为经营者成败之基,应常铭记”。这一“以质论价,诚信酿酒”的世训,使得天佑烧坊美酒的声誉不胫而走。康熙年间,曾以李白的“花间一壶酒”诗意画为商标,用陶瓮盛装应市,在绵州乃至整个川西北地区确立了一席之位。据考,由南麦、小麦、大麦、稻谷、高梁经窖藏发酵,精工酿成的天佑烧坊美酒,味醇香、清冽、回甘。应市之后,顿为饮者所嗜,除绵州各地均争相定购外,潼川府(今四川三台县)所属各县亦先后竞购,一时间难以满足抢购者之需。1701年(康熙四十年),王秉政病逝。王法天恪遵父训,对天祐烧房的配料、制曲、酿制、出酒、品味、定级等,都躬身自任,从严把关,使得天佑烧坊美酒继续在整个川西北地区保持着良好的声誉。王法天还经常告诫其子女“读书乃成才之本,力农乃养家之本,诚信乃处世之本,谦和乃致福之本,汝等不可舍本逐末而趋慕时尚。吾家酿酒始于东汉,其技藏蜀、汾、凤之秘技,要始以质优价廉为取信之基,异存戒心取巧,汝等当自勉之”。民国期间,天佑烧坊人兴财旺,产品更是畅销巴蜀之外的不少地方,遂与邻舍作坊“变陆丰”烧坊、“源鑫”烧坊合并,扩大自身产能,逐渐以瓶装酒热销全国。
天赐:丰谷井
绵阳丰谷镇,古称丰谷井。据《绵阳县志》记载,丰谷井开凿于隋朝(公元581年)。“州东南四十里罗汉寺山麓,古井也……。”《元和志》记载:“丰谷井在州东南四十里罗汉山麓,古井也。口宽七、八尺,下石棱凹凸,深四五丈。井临涪江,有莲花石、天然层瓣若镂成,今存”。丰谷井最早由丰谷富乐烧坊传承人挖掘。掘井取水,井水润粮,井水酿酒,故使丰谷美酒历来深受消费者喜爱。隋朝时涪江水运发达,借助这一便利交通优势,通过水上通道将丰谷美酒运送至长江中下游地区。水是酒之灵魂,酒的品质当然也要取决于水的品格。丰谷井的水源自长江源头雪宝顶,与九寨沟之水同源,是川西高原闻名遐迩的“名酒U型地带”第一道水源,可谓得四川名酒带上风上水,其富含各种微量元素,硬度低,酸度适中,属甜水,是酿酒的绝佳用水。
