金酒历史：

据《金门县志》记载，昔金门用酒，除少数由厦门、漳泉等地输入外，余悉依土法酿制。他如米酒、高粱，亦能自产。后因部队入驻，人口激增，对酒的需求量增长，遂利用旧金城宝月泉之甘泉。以等重白米兑换民间高粱为酿酒原料，始酿“金门高粱酒”。酒厂之设，不仅使种植高粱农民收入大增，民众由食甘薯高粱改为白米，高粱杆则供作燃材。泉甘酒醇，金酒销大增，遂成名产。

1952年9月，酒厂初名九龙江酒厂，1956年更名为金门酒厂，1992年金门解除战地政务之后，金门酒厂改隶属金门县政府，于1998年2月改制为金门酒厂实业股份有限公司。

金酒制程：

制曲：原料采用金门种植之小麦为主，经研磨→搅和→制曲块→培曲→堆曲→磨曲→添加高粱发酵，完成制曲任务。

酿酒：原料采用金门种植高粱为主，经浸泡→蒸煮→冷却→拌曲→发酵→蒸馏→再拌曲→再发酵→再蒸馏(第二道酒)，完成酿酒生产作业。

Jinjiu production process: koji making: the raw material is mainly wheat planted in Jinmen, and the koji making task is completed by grinding → mixing → koji making block → koji cultivation → koji stacking → koji grinding → sorghum fermentation.
