金酒历史：

据《金门县志》记载，昔金门用酒，除少数由厦门、漳泉等地输入外，余悉依土法酿制。他如米酒、高粱，亦能自产。后因部队入驻，人口激增，对酒的需求量增长，遂利用旧金城宝月泉之甘泉。以等重白米兑换民间高粱为酿酒原料，始酿“金门高粱酒”。酒厂之设，不仅使种植高粱农民收入大增，民众由食甘薯高粱改为白米，高粱杆则供作燃材。泉甘酒醇，金酒销大增，遂成名产。

1952年9月，酒厂初名九龙江酒厂，1956年更名为金门酒厂，1992年金门解除战地政务之后，金门酒厂改隶属金门县政府，于1998年2月改制为金门酒厂实业股份有限公司。

金酒制程：

制曲：原料采用金门种植之小麦为主，经研磨→搅和→制曲块→培曲→堆曲→磨曲→添加高粱发酵，完成制曲任务。

酿酒：原料采用金门种植高粱为主，经浸泡→蒸煮→冷却→拌曲→发酵→蒸馏→再拌曲→再发酵→再蒸馏(第二道酒)，完成酿酒生产作业。

In September 1952, the winery was initially named Jiulongjiang winery and renamed as Jinmen winery in 1956. After the removal of the war administration in 1992, Jinmen winery was changed to be subordinate to the government of Jinmen county and changed to Jinmen winery Industrial Co., Ltd. in February 1998. Jinjiu production process: koji making: the raw material is mainly wheat planted in Jinmen, and the koji making task is completed by grinding → mixing → koji making block → koji cultivation → koji stacking → koji grinding → sorghum fermentation. Liquor making: the main raw material is sorghum planted in Jinmen, which is soaked → boiled → cooled → mixed with koji → fermented → distilled → re mixed with koji → re fermented → re distilled (the second liquor) to complete the liquor production.
