“八旺”起源于1938年,随着朝天门码头用牛下水煮麻辣烫的做法兴起,就职于民生航运公司的吴合明(吴正义爷爷),看到常常有很多船工忙得没有时间也没有地方吃饭,就毅然辞去工作,在北碚嘉陵江码头附近,借用了亲戚家的一间八角亭,开了一个麻辣烫小馆子。因为亭阁八面来风,所以爷爷就把餐馆取名为“八旺”,意思是:客人八方来,生意四季兴旺。

从抗日战争、解放战争直到五十年代初期,吴德忠(吴正义父亲)都一直在那里帮忙经营麻辣烫小馆子。“八旺”经历了十几年的风风雨雨,因为公私合营的原因,“八旺”销声匿迹了。

吴正义二十几岁就开始跟随父亲学习炒料技艺。2002年,吴正义决定在北碚碚峡路开设第一家将串串引入坐堂的门店,店名取的就是吴合明曾使用多年的“八旺”。经过4年的经营,“八旺”在北碚得到了众多群众的认可。2006年,吴正义又在云泉路开设了第二家门店。

2008年,吴正义成立了“重庆八旺饮食文化有限公司”,公司进入了重庆火锅连锁经营领域,成为中国商务部特许备案合格的连锁企业。也是这一年,公司底料厂成立,底料厂坚持祖传传统工艺炒料,实现了产供销一体化。

2010年,经过各方商议,决定将“八旺串串香”改为“八旺火锅串串”,成为北碚第一家火锅串串店。

After 4 years of operation, "Bawang" has been recognized by many people in Beibei. In 2006, Wu Zhengyi opened a second store in Yunquan road. In 2008, Wu Zhengyi established "Chongqing Bawang catering culture Co., Ltd." the company entered the Chongqing hotpot chain operation field and became a qualified chain enterprise authorized by the Ministry of Commerce of China. In the same year, the company's bottom material factory was established.
