山东武定府酿造有限公司武定府酱菜，明代天启年间，惠民城内（当时为武定州治）就出现了一些酱园商号。后有仙泉居、元香斋、大同等八家出名的商号延续下来。清康熙、雍正、乾隆三朝，仙泉居酱园的产品多次进贡朝廷。因惠民城为武定府治所，故以武定府酱菜冠名。抗美援朝期间，武定府酱菜作为慰问品批量运往朝鲜，受到中朝官兵称赞。传统武定府酱菜品种主要有磨茄、包瓜、糖包、酱桃仁、杏仁、水晶莴苣、酱黄瓜、酱花生仁、合锦菜、酱地环、虎皮菜、百工皮等30余种。

武定府酱菜之所以久负盛名，是因为它在同类产品中具有鲜、甜、脆、嫩的特点和色、香、味、体的突出风格。

中华人民共和国建立后，建立了惠民县酱菜厂。年武定府酱菜在发掘传统品种，整理传统配方与工艺的同时，又开发了酱两仁、酱三样、多味辣菜、酱芦笋、酱香菇等新品种，使武定府酱菜形成糖醋类、酱制类、泡渍菜、豆制品类4个系列50多个品种。

武定府酿造有限公司成立于1957年，隶属惠民商业总公司。2003年3月改制为股份制有限公司，年营业额1000余万元，公司占地50亩，拥有固定资产1280万元，有3幢营业楼和4个生产车间，营业网点遍布济南，青岛，烟台等省内各大中城市，虽属小型工业企业，但公司技术力量雄厚，拥有研究生3人，本科及专科工作人员28人，其它职工200人，2001年实现利润73万元，上交国家各种税金58万元。

After the establishment of the people's Republic of China, Huimin County pickle factory was established. In, Wuding pickle developed two kinds of pickles, three kinds of sauces, multi flavor hot dishes, asparagus and Lentinus edodes and other new varieties while exploring the traditional varieties and sorting out the traditional formula and technology, which made Wuding pickle more than 50 varieties in four series, i.e. sugar and vinegar, sauce, pickled vegetables and bean. Established in 1957, wudingfu Brewing Co., Ltd. is subordinate to Huimin Commercial Corporation. In March 2003, the company was restructured into a joint stock limited company with an annual turnover of more than 10 million yuan. The company covers an area of 50 mu and has fixed assets of 12.8 million yuan. It has 3 business buildings and 4 production workshops. Its business outlets are all over Jinan, Qingdao, Yantai and other large and medium-sized cities in the province. Although it is a small industrial enterprise, the company has strong technical force, with 3 graduate students, 28 undergraduate and specialized staff It has 200 employees.
