臧健和女士,人称臧姑娘,1977年带着两个年幼的女儿从青岛来香港与丈夫团聚。没想到丈夫却狠心地抛下她们母女三人而去,使她们的生活顿时陷入困境。臧健和只有出去做散工,有时甚至做三份兼职,每天工作十七八个小时。即使这样,也难以摆脱困境。一次她为来家里做客的朋友包饺子,来自青岛的她,有家传的做饺子秘方和技术。客人们吃了她做的饺子后都赞不绝口,并开玩笑说,你有这么好的手艺,做饺子卖定赚钱。说者无心,听者有意。臧健和以前也看到街边有小贩摆摊卖面食,虽说味道只是一般,生意却不错。于是她打定主意,做手工水饺来卖。于是她拿出身边仅有的几百块钱添置了一辆木头车和做饺子的原料,在香港湾仔的码头边摆摊卖起水饺来。那时,包饺子、煮饺子、卖饺子都是她一个人,俗称一脚踢,其中辛苦可想而知。由于她的水饺味道鲜美,价钱亦不贵,服务也很好。随着时间的推移,有了不少熟客,这些熟客又带来不少新客。短短几年之内,湾仔码头臧姑娘的水饺已经是远近驰名了。
