“说起白斩鸡,就数小绍兴”已成为上海人的一句口头禅。“小绍兴”创始于1943年,距今已有60多年的历史。小绍兴各连锁企业主要供应获得“商务部优质产品”、“中国名菜”、“中国名小吃”称号的小绍兴优质白斩鸡,以及具有上海菜特征的上海风味菜系列。特别是小绍兴优质白斩鸡,它以优质鸡种,传统工艺,独特配方,科学管理的流程及皮脆、肉嫩、味鲜、形美的特点,而享誉卓著,深受中外消费者的青睐。上世纪九十年代,江泽民、吴邦国、俆匡迪等领导以及社会各界知名人士多次品尝小绍兴的特色菜品,吴邦国还为小绍兴欣然挥毫题词“独领风骚”。

为了满足日益增长的消费需求1993年小绍兴在原址上建造了一幢6层楼高2700余平方米的多功能“小绍兴大酒店”。2006年小绍兴通过改制,组建了“上海小绍兴餐饮连锁有限公司”正式成为杏花楼集团的成员企业,同时也迎来了新的一轮发展机遇。

小绍兴以经营餐饮为主,兼有客房,食品加工,以及品牌加盟,在经营模式上实行酒家,风味小吃,食品专卖并举。并通过自营及加盟经营实现企业经营的最大化。目前小绍兴有直营企业11户,加盟企业40余户,以及一批和产业相关的契约企业。年销售达2.8亿余元。
