杭州楼外楼菜馆是一家名闻中外、有160年历史的名餐馆。它坐落在美丽西湖的孤山脚下,与西湖风景中的一些很有名的自然和人文景点:平湖秋月、放鹤亭、玛瑙坡、西泠桥、苏小小墓、六一泉、四照阁、西泠印社、俞楼、秋瑾墓、中山公园、文澜阁、浙江博物馆等为邻。

楼外楼创建于公元1848年(清道光二十八年)。它的创始人叫洪瑞堂,是一位从绍兴来杭谋生的落第文人。他从南宋诗人林升的诗中取了三个字,把自己的小店取名为“楼外楼”。

最初的楼外楼“仅是一处平房”,是一爿很不起眼的湖畔小店。但由于店主人善于经营,又烹制得一手以湖鲜为主的好菜,特别是他很重视与文人交往,使得在杭及来杭的文人雅士把来楼外楼小酌作为游湖时的首选。因此,生意日益兴隆,名声逐渐远播。

1926年,已颇有财力的洪氏传人洪顺森对楼外楼作了翻造扩建,将一楼一底两层楼改建成有屋顶平台的“三层洋楼”,内装电扇、电话,成为当时杭州颇有现代气息的酒家,使其生意更为兴隆。在这期间,光临过楼外楼的文化名人有章太炎、鲁迅、郁达夫、余绍宋、马寅初、竺可桢、曹聚仁、楼适夷、梁实秋等,以及蒋介石、陈立夫、孙科、张静江等政要。

1949年5月,杭州解放,楼外楼迎来了新的发展期,但至1952年下半年,也还只有员工14人。1955年,楼外楼申请公私合营被批准,使这家百家老店改变了私人小店的性质。公私合营后的楼外楼得到了政府和政策的大力扶持,各方面的工作都大有起色,特别是在恢复名菜特色上,更是成绩斐然。1956年,省人民政府认定杭州名菜36只,其中有10只就是楼外楼提供的。这10只名菜就是:西湖醋鱼、排面、叫化童鸡、油爆虾、干炸响铃、番茄锅巴、火腿蚕豆、火踵神仙鸭、鱼头汤、西湖莼菜汤。

1980年,楼外楼被列入杭州市体制改革试点单位;1983年实行了承包;1984年民主选举经理;1999年9月,进行了由全民所有制改制成国有法人和企业职工共同持股的多元投资主体的实业有限公司。这是百年老店在体制上的创新。

从上个世纪90年代中期开始,杭州加快了西湖整治步伐,使整个湖区的面貌焕然一新。楼外楼也先后六次,分别对各个餐厅、包厢以及大堂门面进行再上层楼的大装修。经过这番装修,楼外楼从外到里,从整体布局到细部结构都更好地体现了西湖的历史、地域的文化内涵,使人在此享受到美食美景的同时,又能自然地感受到浓浓的文化氛围和情调。

在这番装修中,楼外楼请东阳木雕大师陆光正为他们设计创作了一帧大型壁雕:《东坡浚湖图》。这帧壁雕有50平方米画面,85个人物,5个连成一气的五个场景,真实生动地记录和反映了九百多年前苏东坡率众浚西湖筑苏堤架六桥的全过程。这是东阳木雕中少见的精品巨作,气势恢宏,精美绝伦,令每一个到楼外楼的宾客,都会眼睛一亮,在大饱口福之前,先饱一番眼福。

Hangzhou Louwailou restaurant is a famous restaurant with a history of 160 years. In 1955, the application for public-private joint venture was approved, which changed the nature of the private shop of this hundred old shop. After the public-private joint venture, the building outside the building has been greatly supported by the government and policies. All aspects of the work have made great progress, especially in restoring the characteristics of famous dishes. In 1956, the provincial people's government identified 36 famous dishes in Hangzhou, 10 of which were provided by buildings outside. These 10 famous dishes are: West Lake vinegar fish, noodles, beggar chicken, fried shrimp, dry fried bell, tomato pot, ham and broad bean, fire heel immortal duck, fish head soup, West Lake water shield soup. In 1980, the building outside the building was listed as the pilot unit of Hangzhou system reform; in 1983, it was contracted; in 1984, it democratically elected the manager; in September 1999, it was transformed from the ownership by the whole people into an Industrial Co., Ltd. with multiple investment subjects jointly owned by state-owned legal persons and enterprise employees. This is a century old store innovation in the system. Since the mid-1990s, Hangzhou has speeded up the renovation of the West Lake, making the whole lake area look new. The outer building has also been six times, respectively for each restaurant, box and lobby facade, and then the upper floor of the big decoration. After this decoration, the outer building, from the outside to the inside, from the overall layout to the detail structure, better reflects the historical and regional cultural connotation of the West Lake, so that people can enjoy the beautiful food here, and at the same time feel the thick cultural atmosphere and sentiment naturally. In this decoration, Lu Guangzheng, a master of Dongyang wood carving, was invited to design and create a large-scale wall sculpture for them outside the building: the picture of Dongpo lake dredging. This frame has 50 square meters of pictures, 85 figures, 5 consecutive five scenes, which truly and vividly records and reflects the whole process of Su Dongpo's leading people to build the six bridges on the West Lake more than 900 years ago. This is a rare masterpiece of Dongyang wood carving. It's magnificent and exquisite. Every guest who comes to the building outside the building will have a bright eye and have a good eye before he is full of food.
