松原市松江老醋酿造有限公司,前身是扶余老醋厂。始建于1937年,当时叫“松江酱园”,位置在老扶余县城区的西北营子(现松原市宁江区团结街道北),是由当时居住此地的代氏业主开办,以手工小作坊为主。面积400余平方米,利用东北高梁经天然发酵制作老醋,并兼营酱油、酱菜、榨油等手工艺,以满足老城区人们的生活之用。这在当时来讲规模很大,且小有名气。
1941年代氏聘请山西省清源县字号“复兴泉”制醋厂的技术工人赵守信担任制醋技师,后经他不断改革,在保持原有的传统酿造工艺基础上又引进了山西固体发酵制醋的方法:薰醋和热水淋等工艺,既达到了高温灭菌的效果,又形成了自身独有的风味。根据醋的味道、口感、色泽、体态及酸度、糖度等特点取名为“老醋”,于是“松江酱园”酿造的“松江老醋”诞生了!由于当时地名叫扶余县,所以外地人习惯叫“扶余老醋“(即”松江老醋“)并延用至今。
