大顺斋,创业于1637年,追溯昔日,明崇祯三十年(1640年),来自南京的回民小贩刘大顺,带着全家在当时市井繁华的通州镇落脚谋生他先是在通州城内走街串巷挑担叫卖,专门制做经营糖火烧。
后因生意兴旺,便在街上开了个几间门面的铺子,老婆掌柜,他和儿子制作,取名“大顺斋”,一来表示刘家字号,二求买卖顺利。至清朝乾隆年间,生意更旺,遂在毗邻闹市的回民胡同买下五间门面,两间为店,三间当作坊,经营糖火烧及南味糕点,并请京城书法家吴春鸿题写了“大顺斋南果铺”的字号,镂刻在门楣的青砖上。
清末,在刘大顺的第六代孙,刘九爸的苦心经营下,大顺斋进入鼎盛期,先后设立四个分号。设在通县的大来号,专管供应油、面等原料。设在北京城内的大生号、大新号、大兴号则出售糖火烧,兼营油盐酱醋。
1900年,八国联军入侵北京。大顺斋日渐萧条。民国元年,通州驻军姜桂题部哗变,大顺斋被焚毁,虽于当年重建,却已大伤元气。到解放前夕,难以维持。
几百年来,大顺斋创出了40多种具特色的清真糕点。其中历史久、名声响的,当推桂花糖火烧被誉为素负盛名的“通州三宝”(大顺斋的糖火烧、小楼饭馆的烧鲇鱼、万通酱园的酱豆腐)之一。
