雨花茶是南京特产,因产于南京中华门外的雨花台而得名。茶叶外形圆绿,如松针,带白毫,紧直。冲泡后茶色碧绿、清澈,香气清幽,品饮一杯,沁人肺腑,齿颊留芳 ,滋味醇厚,回味甘甜。

雨花茶是江苏省在建国后研制出的名茶种类。原产地南京市中山陵,即紫金山。研制至今已有五十多年历史,并在雨花台等地开枝散叶,形成雨花茶产业。现今拥有雨花茶原产地生产准用的企业已有三十余家,年产量五百吨左右。

南京雨花茶是绿茶炒青中的珍品,也是中国三针之一,是优质细嫩针状春茶,产于南京中山陵,雨花台园林风景区,当茶芽萌生至一芽三叶时,于清明前约十天开采直至清明,只选一芽一叶芽叶,采下长度为2--3厘来的茶芽,杀青,揉捻,整形干燥,涂乌柏油手炒,每锅只可炒250克茶。

雨花茶在原料选择和工艺操作上都有严格的要求,在谷雨前,采2.5至3公分长一芽一叶的嫩叶,经过杀青、揉捻、整形、烘炒四道工序,全工序皆用手工完成。

在清明前后采摘一芽一叶或一芽二叶,不采虫伤芽叶、紫芽叶、红芽叶、空心芽叶。采后鲜叶避免日晒,及时加工,按炒青绿茶制法,经轻度萎凋,高温杀青,适度揉捻,整形干燥等工序,再经圆筛、抖筛、飘筛,分成特级和1~4级四个等级。雨花成品茶形似松针,紧直圆绿,锋苗挺秀,色泽翠绿,白毫显露,以热水冲泡,叶底均嫩,滋味鲜凉,气香色清,有除烦去腻,清神益气之功效。。

雨花茶共分为特级一等雨花茶、特级二等雨花茶、一级雨花茶、二级雨花茶四个等级。

雨花茶采摘的鲜叶应大小匀称、整齐。不带单片叶、对夹叶、鱼叶、虫伤叶、紫叶、红芽、空心芽等。

雨花茶应具有正常商品的外形及固有的色、香、味,无异味、无劣变。产品应洁净,不得混有非茶类夹杂物。不着色,不 得添加任何人工合成的化学物质。

从中山陵茶厂雨花茶诞生至今,雨花茶已经走过了44个年头,雨花茶的生产也随着时代的发展发生了巨大的变化。60年代完全手工生产制作,产量一直徘徊在600公斤左右,生产厂家仅有中山陵茶厂、雨花台茶场、江宁茶叶试验场以及青龙山茶场等少数茶场,远远不能满足消费者的需求。为了扩大名品产量、提高规模效益、降低劳动强度,自80年代初开始尝试使用机械生产雨花茶,1986年,雨花茶全程机制技术的研制获得成功,使得雨花茶生产得以发展,茶园面积由60年代的几千亩增加到目前(2008年初统计数据)的10万亩(实际开采面积7.5万亩),雨花茶年产量1430吨,雨花茶产值2.8亿元,雨花茶生产企业近300家,雨花茶机械生产线230多台(套),机制雨花茶占到雨花茶总产量的95%以上。

After picking, the fresh leaves shall not be exposed to the sun, and shall be processed in time. According to the method of stir fried green tea, they are divided into four grades, i.e. super grade and 1-4 grade, by light withering, high temperature killing, proper rolling, shaping and drying, and then by round screen, shaking screen and floating screen. Yuhua finished tea looks like a pine needle, tight, straight, round and green, with sharp seedlings, emerald green color, pekoe exposed, brewed in hot water, with tender leaf bottom, fresh and cool taste, clear fragrance and color, which has the effect of removing boredom, removing greasiness, clearing spirit and benefiting qi.. Yuhua tea is divided into four grades: super grade I Yuhua tea, super grade II Yuhua tea, grade I Yuhua tea and grade II Yuhua tea. The fresh leaves of Yuhua tea should be of uniform size. Without single leaf, double clip leaf, fish leaf, insect injured leaf, purple leaf, red bud, hollow bud, etc. Yuhua tea should have the shape of normal commodity and inherent color, fragrance and taste, without peculiar smell and deterioration. The product shall be clean and free of non tea inclusions. It shall not be colored and any synthetic chemicals shall not be added. Since the birth of Yuhua tea in Zhongshan Mausoleum tea factory, it has been 44 years. The production of Yuhua tea has changed greatly with the development of the times. In the 1960s, it was completely produced by hand, with the output hovering around 600 kg. There are only a few tea farms, such as Zhongshanling tea factory, Yuhuatai tea farm, Jiangning Tea Experimental Farm and Qinglongshan tea farm, which are far from meeting the needs of consumers. In order to expand the output of famous products, improve the scale efficiency and reduce the labor intensity, we began to use machinery to produce Yuhua tea in the early 1980s.
