福鼎大白茶因采摘标准不同而分为白芽茶(太姥银针、白毫银针)和白叶茶(白牡丹、新工艺白茶、贡眉、寿眉)；福鼎大白茶因其茶树品种不同而分小白、大白、水仙白三类，采自福鼎本地菜茶茶树者称小白，采自福鼎大白茶茶树者称大白，采自水仙茶树者称水仙白，先有小白，后有大白，再有水仙白。在福鼎大白茶茶树只采一芽者，其制成品称白毫银针；在福鼎大白茶或水仙茶树采一芽二、三叶者，其制成品称白牡丹；在福鼎本地菜茶茶树采一芽二、三叶者，制成品称贡眉、寿眉。以制茶种类说，先有白毫银针，后有白牡丹、贡眉、寿眉、新工艺白茶；
