据上海现代商业中心黄浦区的刀剪档案记载,上海地区出现最早的一家张小泉刀剪店是开设在光启路上的“张小泉忠记”,创建于1911年。

四年以后的1915年,上海同文馆翻译处出版了《上海各业行名簿》一书,其中剪刀行业的栏目中共载有三家张小泉剪刀店。在另一份1920年有关资料中,又有四家张小泉剪刀店开始在原南市区的大码头大街,分别为“张小泉”、“张小泉协记”、“张小泉春记”和“张小泉连记”。

二十世纪初,是上海经济增长快速发展时期,尤其是北区的迅速发展,剪刀业的开设由南向北延伸。到1922年有何寿生在新闸路179号开设“张小泉寿记”,福建路316号的“张小泉昌记”。到上海解放前夕,全市共有刀剪商店257户,其中以“张小泉”为字号的剪刀店有近100家。

1956年公私合营时,将开设于福建路351号的“张小泉协记”、南京东路450号的“张小泉鸿记”和南京东路490号的“陆大隆刀店”三家合并,组建成“上海张小泉刀剪商店”。1990年商店更名为“上海张小泉刀剪总店”。
