清朝顺治年间的1649年,江苏苏帮酿造大师董玉和来湘开设酱园,并以自己的名字命名为“玉和酱园”,原址位于 古城小西门,现长沙“玉和园巷”就因此得名。玉和酱园以玉和醋(俗称玉醋)闻名迄今已有三百多年历史,历久不衰。玉醋是以优质糯米为主要原料,辅以紫苏、花椒、茴香、食盐等,并以炒焦的草米为着色剂,从原料加工到成品包装各道工序的操作规程极为严格,产品制成后要储存一两年后放可出厂销售。同时,玉和酱园用压印有“玉”字的泥团封坛口,既是原始的商标品牌,产品标记,又可保障醋的风味不变。玉醋具有浓(浓而不浊)、香(芳香醒脑)、醇(越陈越香)、鲜(酸而鲜甜)四个特点,它不仅是日常烹调佳料,还具有开胃生津、和中养颜、醒脑提神等多种药用价值。据长沙市地方志和文史资料的记载,民间曾广泛流传“陈年老醋出坛香,“玉”字封泥走四方”的说法,可见玉和当年的兴盛。

玉和酱园自其创始人董玉和后,几易其主,但牌名一直保存,建国后玉和醋得到进一步发展,1958 年年产量达 200 吨。改革开放后,政府大力恢复名牌老店力度,玉和酱园于1983年更名为长沙玉和醋厂,同时大力改善玉醋的生产设施和完善生产工艺,玉醋的产量和质量大大提高;市场份额不断增大,品牌价值也不断提升,产品行销全国十七个省、市(自治区)及东南亚等国。2002年,为适应企业发展的需要,长沙玉和醋厂改制组建成长沙玉和酿造有限公司,并迁址长沙县榔梨镇投资两千余万元,建成占地面积53亩,年产酿造食醋能力上万吨的现代化股份制企业。2009年,公司投资千余万元建成湖南省液态白醋纯酿车间,年产纯酿白醋5000余吨。2012年,公司又投资近千万元新增一条全自动灌装线、新建一个黄酒酿造车间,产品品质大幅提升。                          

公司在玉和酱园原址——湖湘民食民俗民风一条街(长沙天心区坡子街202号)建成了占地几千平米的玉和醋文化博物馆。馆内陈列了许多与玉和醋有关的文物、资料等,对玉和传统酿醋的工艺流程进行展示,同时每天对国内外游客进行免费开放,不定期进行相关的学术交流。

In 2012, the company invested nearly ten million yuan to add a full-automatic filling line and a new rice wine brewing workshop, greatly improving the product quality.
