大白兔奶糖的前身源自1943年上海“爱皮西糖果厂”。该公司的商人尝试过当时英国的牛奶糖之后,认为味道不错,经过半年后便仿制出自家品牌的国产奶糖。包装则使用红色米奇老鼠的图案,并名为“ABC米老鼠糖”。由于售价比舶来品便宜,所以广受民众喜爱。直至1950年代,该糖果公司被收归国有,米奇老鼠被视为崇洋媚外的符号,于是包装图案改成白兔,并于1959年作为中华人民共和国国庆十周年的献礼产品。

时至今日,大白兔奶糖已经成为中国首屈一指的糖果品牌。周恩来总理甚至于1972年将大白兔奶糖馈赠访华的美国总统尼克松。该糖果品牌虽然已经有一定历史,但随着中国经济增长,城市和农村均对大白兔糖果的需求有增无减,尤其在农历新年期间,不少家庭的全盒里都可以找到大白兔奶糖的踪影。2004年,大白兔奶糖销售额达6亿元人民币,每年以双位百分比递增,并向外出口至40多个国家和地区,包括美国、欧洲、新加坡等。

大白兔奶糖的口味和包装也不是一成不变的。资料指刚发售时,白兔图案是卧着的;其后修改成今日的跳跃状。另外除了传统的牛奶口味外,也添加了咖啡、拖肥、花生鸟结、鲜果、红豆等口味,更加入富中国特色的“奶油话梅味”等。今如今大白兔奶糖不仅是中国名牌和中国驰名商标,而且产品更是经销全世界40多个国家和地区,成为国际市场上经久不衰的大众宠儿。大白兔经典奶糖系列现主要有:经典原味、酸奶味、红豆味、清凉味、巧克力味和玉米味等。

2012年1月31日,上海梅林正广和股份有限公司发布公告,称近日公司非公开发行所募集资金购买的上海冠生园食品有限公司(冠生园集团全部食品主业经营性资产)、上海市食品进出口有限公司(上海市食品进出口公司经营性资产)已完成工商变更登记。冠生园集团旗下有关大白兔奶糖等经营性资产也同时注入上海梅林。
