龙窝酒作坊创建于清代光绪年间，距今已有百余年历史。至民国时期，龙窝酒名扬关中，民间有“东龙西凤”之美誉。龙窝酒酿造技艺在承传古法中被历代师傅总结为九句口决，即：“人得其诚、水得其甘、曲得其时、粮得其实、器得其洁、工得其细、拌得其准、火得其缓、酒得其真”。其知识、经验、准则自成系统。

龙窝酒的酿制用曲为中温曲，采用关中地区优质小麦、大麦、碗豆三种原料，工艺采用古法制曲，经人工踩坯，入室发酵而成。龙窝酒的酿造酒原料采用关中地区的优质高梁、玉米为原料，以稻糠皮为辅料。工艺过程包括润糁、清蒸、加浆、摊凉、加曲、入窖、发酵及蒸馏等，其每一个环节都有着独特的知识、经验和操作准则。龙窝酒的繁杂工序都是手工完成，这是一种依赖感性和经验的操作过程。一百多年来，它的工艺技术全靠师徒传承，经过一代代“酒把式”的不断实践，龙窝酒酿造技艺已经形成了一套独特而完整的知识系统，从原料特点到制曲和发酵，它的每一个重要环节都和关中的气候相适应。百余年来，龙窝酒作坊一直延续着祭拜龙王和酒神的传统，这种习俗和其酿造技艺共同构成了古代酿酒文化较为完整的历史面貌，具有很高的历史和文化价值。

The brewing technique of Longwo wine is summed up as nine sentences by the masters of the past dynasties in the ancient law, that is, "people get their sincerity, water get their sweetness, Qu get their time, food get their reality, utensils get their cleanness, work get their fineness, mix them accurately, fire get their slowness, wine get their truth". Its knowledge, experience and criteria are self-contained. Longwo liquor is brewed with medium temperature koji, which is made of three kinds of raw materials of high quality wheat, barley and pea in Guanzhong area. The koji is made of ancient koji and is fermented in the room after being trodden manually. Longwo liquor is brewed from high quality sorghum and corn in Guanzhong area, with rice bran skin as auxiliary material. The technological process includes grits moistening, steaming, pulping, cooling, koji adding, cellaring, fermentation and distillation, etc., each of which has unique knowledge, experience and operation criteria. The complicated process of Longwo liquor is done by hand, which is a kind of operation process depending on sensibility and experience. For more than 100 years, its craft and technology are all inherited by teachers and apprentices. Through the continuous practice of generations of "wine handle style", Longwo wine brewing technology has formed a unique and complete knowledge system. From the characteristics of raw materials to koji making and fermentation, every important link of it is adapted to the climate of Guanzhong.
